Per your request Lifetime Fitness Cycle Members….here’s the recipe!1 stick butter, softened 1 ½ cup sugar 1 ½ cup light brown sugar 4 eggs 1 teaspoon Spice Island Vanilla 1 ½ teaspoon baking soda 1 jar crunchy style peanut butter (18 oz.) 18 ounces old fashion quick oats 16 ounces semi-sweet chocolate chips Preheat oven to 350 degrees F. In a large mixing bowl beat butter and sugars until light and fluffy using an electric mixer on medium speed, scraping down sides of bowl as needed. Add eggs, vanilla and baking soda. Mix well. Add oats and chocolate chips and mix until well combined. Drop dough by heaping tablespoons 2” apart onto parchment lined baking sheet. Bake cookies for 10-12 minutes or until lightly browned at edges. Cool on pan for one minutes, remove to cooling rack until ready to serve.
